1. Fruit preservation

Fruits such as apples and citrus are intolerant to storage and perishable, and commonly used refrigeration methods are not ideal. Pullulan polysaccharide is odorless and has no side effects on the human body. It is an ideal fruit preservative. It does not have the disadvantages of packaging fruits with traditional coating agents such as propylene alcohol, solvent wax, ##wax and polyethylene. Although these coating agents can reduce the oxygen content in the fruit and increase the carbon dioxide gas, they also induce fermentation and accumulate ethanol and aldehyde to produce malodor.

2. Egg preservation

Eggs are important direct food and food ingredients, and it usually takes more than a week from output to consumption. Eggs are prone to spoilage, and refrigeration costs are too high. Applying liquid paraffin or a mixed emulsion of paraffin, water and surfactant on the surface of eggs can play a role in keeping fresh, but it is easy to stick to the wall when being handled, and it is easy to be polluted by hands and the environment, reducing the fresh-keeping effect. Impregnated or sprayed with pullulan can form a thin film layer with firm adhesion and smooth surface on the eggshell surface. The thickness of the film is 0.01~0.1mm, which can increase the hardness of the eggshell, prevent the rupture caused by local compression, prevent the invasion of **** and the circulation of oxygen, carbon dioxide, water vapor, and delay the deterioration of protein and egg yolk.
